Cauliflower Rice

Delicious and quick, cauliflower rice or pulao or pilaf is easy to make and goes with anything, along with some yoghurt or it is a meal in itself.

Ingredients

Half cauliflower cut into small pieces or florets

1 cup basmati rice (washed and soaked in water for ten minutes)

1onion thinly sliced

2 tomatoes roughly chopped

1 green chilli

2 tsp ginger garlic paste

½ tsp jeera powder

¼ tsp turmeric

1 tsp chilli powder

2 cardamom

2 small cinnamon sticks

3 cloves

Juice of half lime

¾ tsp jeera

2tsp ghee or oil

2cups of boiling water

Salt

Chop cauliflower into small florets.  Soak it in water for 10 minutes and then wash nicely and discard the water.  Apply ½tsp salt, turmeric and chilli powder to the cauliflower pieces and set aside.

Wash and soak basmati rice for 10 minutes.  Drain all the water from the rice.   Boil four cups of water separately.

Heat ghee or oil in a vessel.  Add jeera, once it crackles add all the spices, add sliced onion and fry till turns light brown, add chopped tomato add the ginger garlic paste, green chillies and fry for a minute.  Now add the cauliflower florets and fry for some time.  Add drained rice and gently fry for a minute.  Add 2 cups of boiling water, salt, lime juice and let it boil well for some time.  Close the lid of the pressure cooker and keep it until the first whistle goes off.  Put off the fire and let it remain in the cooker for twenty minutes.  You can garnish with coriander leaves.  

Serve this pulao  with some yoghurt or raitha or greens and fish or chicken fry. In-fact you can have anything along with it.
