Mutton with Mogem (field marrow) and potatoes tasted great in the roasted coconut curry.
Ingredients
500 gms Mutton cut into small pieces
1 small mogem/field marrow
1 potato cut into small pieces
Dry roast the following one by one
1½ tbsp coriander
½tsp jeera
6 dry long red chillies
Roast the following in half a tsp of oil until lightly browned)
5 cloves of garlic
1 ½ sliced medium onions
1 ½ cup grated coconut
Grind all the above roasted masala along with:
½ tsp turmeric powder
small ball of tamarind
Seasoning:
1 onion thinly sliced
1 small cinnamon
3 cloves
1 tbsp ghee
Wash the mutton pieces, add salt and pressure cook until the meat is tender. Keep aside
Wash the field marrow, remove the skin, seeds, pith and cut them into small cubes. Boil it in water and salt until tender.
Roast all the above mentioned masala, make sure it is not burnt and grind it well.
Heat ghee in a vessel on medium flame, add cinnamon and cloves, the thinly sliced onion. Fry it until it has turned golden brown. Add the ground masala paste and fry for two minutes. Add the cooked meat along with its stock of water and field marrow, add salt. Check the consistency of the curry, let it not be too thick, add little water if thick, close the lid and let it boil well for 5 minutes. Serve hot with bread.
