Mutton Rogan Josh

Flavourful and tempting Kashmiri Mutton Rogan Josh, is meat with the bone, cooked until tender, along with Kashmiri chilli powder, spices and yoghurt. This thick, rich aromatic gravy makes it so delicious that your family will enjoy every bit of it.

Ingredients

1 kg Mutton (medium pieces)

2 cinnamon sticks 2″ each

4 cloves

2 cardamoms

3-4 medium onions finely sliced or coarsely ground)

2 full tsps ginger garlic paste ( or grind 1″ginger+ 1 whole pod garlic)

2 tbsp tomato paste

4tbsp curds

2 tbsp cashewnut powder

3-4 tsp Kashmiri chilli powder (add more or less according to your spice level)

pinch of turmeric

salt

ghee or oil

Make a paste of 2tbsp curds and cashewnut powder and keep aside.

Wash the meat pieces, drain the water and keep it aside

Heat the pressure cooker on medium fire with 2 tbsp ghee/oil, fry cinnamon, cloves and cardamom for a second, immediately add sliced/coarsely ground onions and fry for 10 minutes until slightly golden brown.

Add ginger garlic paste and fry, followed by tomato paste, fry for sometime.

Next add the cashewnut paste,Mix well.

Add chilli powder, turmeric, salt and finally the remaining 2 tbsp curds, add meat and fry for a minute, 1 cup water and mix well. Close the lid and pressure cook for 10-12 minutes and put off the fire. Once the cooker has cooled after 15 minutes, open and make sure the meat is tender and check for salt and spice. It tastes heavenly! Serve hot with paratha

*(Cooking of meat depends on how tender the meat you have bought is. It may require more time to cook if the meat is tough.)
