Banana Walnut Cake

I love the smell of banana cake baking in the oven.  It is moist and flavorful and as you eat you can get the lovely taste of the sweet bananas.  We always have overripe bananas at home and it is a great way to use them.

Banana cake

3 overripe large bananas

2 large eggs

2 cups white flour or maida (240 gms)

1 cup granulated white sugar

½ cup oil or butter

½tsp baking soda

1 tsp baking powder

½tsp tsp cinnamon powder

2 tbsp curds

1 tsp vanilla essence

½tsp salt

chopped walnuts & raisins

Preheat oven to 180 degrees C.  Butter or spray a cake pan and keep it ready.

Take a bowl and sieve the flour, baking powder, soda, cinnamon powder, salt and keep aside.

In another bowl beat the eggs by hand or cake mixer.  Add the sugar and continue beating. Now put the mashed ripe bananas into it and stir.  Pour the oil or butter into it and as you keep beating add the dry mixture little at a time and keep stirring or beating well.  Add the essence, curds and mix well.  Finally add the chopped nuts and raisins and gently mix twice with a spatula.  Pour this batter into the greased pan and keep it in the centre of the preheated oven and bake for 45minutes.  Once the top of the cake has turned to golden brown, check with a tooth pick by piercing it in the centre of the cake and if it comes out clean your cake is done, if it is wet, keep for 5 more minutes.
