Garlic Rice

This is a quick and easy Fried Garlic Rice recipe. It is aromatic, with garlicky flavor and loaded with crispy garlic chips. I love this, as only few ingredients are used, quick and easy to make and goes along with any veg or non veg curry. Leftover cooked basmati or jasmine rice is the best to make this garlic rice and can be prepared in five minutes!

Ingredients for Garlic Rice:

1 cup basmati / jasmine rice

1-2 tbsp olive oil

10 garlic cloves minced (or 1 tbsp full)

1/2 tsp salt

1/2 tsp pepper powder

How to Make Fried Garlic Rice?

How to cook Garlic Fried Rice:


Cook 1 cup basmati rice in 2 cups of water. Bring it to a rolling boil, keep the flame on medium, When most of the water is absorbed, close the lid, put off the fire and keep it aside for half an hour.
After its cooked open the lid and let the basmati rice cool, keep it aside. Rice should be cold, not hot.

Leftover rice in the refrigerator is the best. Break the rice clumps if any using a spatula.

Heat a wok / kadai, add oil, once hot keep it on low flame and add minced garlic and fry until the garlic turns into nice golden brown.

Now add the rice, salt, pepper and mix, Stir fry for 1-2minutes on low flame, The garlic in the oil will give a nice flavor to the rice. It’s ready! Now enjoy your garlic rice.

Have garlic rice with Mutton Rogan Josh or Pepper Chicken or any veg gravy.

Optional: Garnish with finely chopped spring onions.

Pasta With Mince Meat

Ingredients

250gms pasta
500 gms lamb/beef /chicken mince meat
2 cinnamon sticks
4 cloves
2 big onions
3 tbsp tomato paste
2 tsp ginger garlic paste

½ tsp garam masala powder
2 tsp chilli or bafat powder
¼ tsp turmeric powder
200 gms button mushrooms
1 carrot
½ cup Peas
Few coriander and mint leaves
Oil
Salt

How to make Mince Pasta

Method
Boil about 1.5litres of water in a big saucepan. Add salt and 1 tsp oil. Once it starts boiling add the pasta and cook it for 10 minutes. Make sure its cooked well. Then drain off the water, sprinkle some cold water on the pasta and keep it aside. Keep aside half cup pasta water.

Heat 2tbsp oil in a wok and fry cinnamon and cloves for a second, throw in the onions and fry on medium fire for 10 minutes.

Add the ginger garlic paste, tomato paste and continue frying for another 5 minutes. Add the powders, mix well.

Now add the mince and fry nicely for 2 minutes. Add salt, close the lid and let it cook for 15 minutes. Keep stirring in between, if too dry add half cup of pasta water. Add chopped carrot, peas and mushrooms, mix well and continue for another 6 minutes. Check the taste for salt and spice.

Finally add the drained pasta, chopped coriander and mint leaves, mix well and put off the fire. Enjoy it when it’s hot.

Sweet Pulao

Sweet Pulao was my favourite as a child and I waited for it to be served at the Mangalorean weddings. At every wedding we had mutton, chicken, pork, sannas, which my mother always cooked at home too, but at the end that sweet pulao with plum chutney was something I always looked forward to and loved it. I still enjoy it and make it occasionally at home.

Ingredients

1 cup basmati rice

2 cups hot water (boiled separately)

1 big onion

3 tbsp cashew nuts

3 tbsp raisins

2 tbsp sugar

2 small cinnamon sticks

4cardamoms

2 cloves

ghee

salt

How to make Mangalorean Sweet Pulao ?
Mangalorean Sweet Pulao

Heat ghee in a vessel and fry the finely sliced onions until golden brown for garnishing. Remove and keep aside.

In the same ghee, fry the cashew nuts slightly and then the raisins until they just puff up. Remove and keep aside.

Add little ghee and fry the cinnamon, cardamom and cloves for half a minute. Now add the washed and drained rice to it and fry gently for two minutes on medium fire. Add hot water, sugar, salt, mix all together and check the taste, should be sweet and salty. Let it boil on medium flame well, close the lid and continue boiling until most water is absorbed. Put off the fire and let it remain closed for another twenty minutes. Then open it and mix gently with a fork.

Just before serving garnish with fried onions, cashewnuts and raisins.

Beetroot pasta

A very healthy and easy way of making pasta. Beetroot pasta is quick to prepare and turns out really delicious, vegetarian.

1 beetroot

1 cinnamon sticks

1 cardamom

2 cloves

1 onion

3 tomatoes

2 tsp ginger garlic paste

¼ tsp jeera powder

1tsp chilli powder

Salt

2 tbsp oil

250gms pasta

Boil water in a big pot.  Add 1 tsp salt and oil and once it starts boiling add the pasta.  Boil until just cooked.

Pressure cook or boil the beet.  Then grind it into a paste.

Chop tomatoes roughly and grind into a paste

Heat oil in a wok.   Add the cinnamon, cardamom, and cloves followed by the onions.  Fry the onions on medium fire until brownish in colour.  Add the garlic paste, tomato paste, and continue frying for five minutes.  Add jeera, chilli powder, salt and finally the ground beetroot.  Add half cup water and let it boil well 2-3 minutes. Your beetroot sauce is ready. Just before serving mix the cooked pasta in it and enjoy it hot along with fried or grilled chicken. Its yummy!:)
